A tasty green salad will keep your Christmas meal fresh and light.
Mix the orange juice, lemon juice, mustard and extra virgin olive oil in a jar.
Shake well and season to taste.
When ready to serve put the baby gem, radicchio and radishes in a bowl. Toss the salad with the dressing. Scatter the finished salad with the pomegranate.
Juice of half an orange
1 tablespoon lemon juice
1 teaspoon Dijon mustard
3 tablespoons extra virgin olive oil
2 baby gem or cos, washed and torn
1 small radicchio, roughly torn
1 bunch baby radishes, thinly sliced
2 tablespoons pomegranate arils
