Is there anything better than roast potatoes? Take them to the next level this Christmas by roasting them in duck fat… delicious!
Preheat the oven to 180°C.
On a chopping board put a potato and, along either side of its length, place a pair of chopsticks or wooden spoons (this helps to ensure that you won’t cut through to the base). Then cut thin slices across the potato.
Put onto a baking paper-lined roasting dish. Repeat with the remaining potatoes.
Melt the duck fat and combine with the thyme and brush over the potatoes, ensuring that some duck fat goes into the cut slices.
Season generously with sea salt and bake for 60 mins until cooked through and golden. Baste with the duck fat halfway through cooking.
