QUINOA TABBOULEH

Make this salad ahead of time so the lemon juice really has time to soak into the quinoa and vegetables, so the salad is even more delicious!

Prep: 15 minutes
Cook Time: 20 minutes
Serves: 4-6

Method

Rinse quinoa well under cold running water.

Put in a saucepan with 1 cup of water, season with salt and bring to the boil.

Reduce the heat to low, cover and cook for 15 mins.

Turn off the heat and stand covered, for 5 mins.

Fluff up with a fork, then stir in the lemon juice and oil.

Set aside to cool. Stir in the remaining ingredients then allow to stand for 30 mins before serving.

Ingredients

1/2 cup quinoa

2 tablespoons lemon juice

3 tablespoons extra virgin olive oil

1 cucumber, halved lengthwise, deseeded, chopped

2 spring onions, chopped

3 tomatoes halved, deseeded and chopped

1 cup finely chopped flat leafed parsley

3/4 cup finely chopped coriander leaves

3 tablespoons pine nuts, toasted
